Isomaltulose, also named palatinose, molecular formula: C12H22O11•H2O, is white crystalline reducing disaccharide, which contains one molecular water, when losing the water, it will not appear crystalline shape. Its melting point is 122—123℃, which is much lower than cane sugar(182℃). Isomaltulose has 50% sweetness of cane sugar and will not change with temperature. It performs natural and pure sweetness under various temperatures.
